Y'all. We need to have a serious conversation about this Chocolate Covered Strawberry Bark.

It's so good. You know those chocolate covered strawberries everyone always orders around Valentine's Day? This bark is like that only better and way less expensive. Those boxes of chocolate covered strawberries aren't cheap. 

You know what's also great about this dessert? There's no baking involved. Which is great if you want to make something special but don't enjoy baking. 

Honestly, I don't blame you if baking isn't really your thing. Personally, I don't hate it or anything but sometimes I just rather not. Baking can be fun, but sometimes you just need an easy no-bake treat that doesn't require you to turn on an oven or measure out the perfect amount of baking soda.

Thankfully, for there's no ovens involved in making this treat and honestly, measuring anything is optional. My kind of dessert.

Making this Chocolate Covered Strawberry Bark is easy.

You just melt some chocolate, throw the rest of the ingredients into the chocolate, pour it on a baking sheet, and let it cool. Simple. I firmly believe in not making food more complicated than necessary and that motto applies to dessert as well!

The bark also uses freeze dried strawberries, instead of fresh, to make things super easy. If you've never tried freeze dried strawberries they're like little bites of delicious strawberry goodness and they are absolutely delicious. They give the bark texture and a bright fresh fruit flavor that works well with the chocolate. To make things even more decadent, cashew butter and shredded coconut are added to the mix. 

I promise this recipe is just as easy as it sounds! So go ahead and make a batch for Valentine's Day!

  • 12oz semi-sweet chocolate
  • 1/2c cashew butter
  • 1c crushed freeze-dried strawberries (plus more for the top)
  • 1/2c shredded coconut (plus more for the top)


  • baking sheet
  • parchment or wax paper 
  • microwave safe bowls


  1. Pour the chocolate into a microwave safe bowl and microwave for 30 seconds at a time until it's melted. Stirring the chocolate each time you remove it from the microwave. 
  2. When the chocolate is melted, add in the cashew butter, crushed strawberries, and coconut and stir until it's well combined. 
  3. Line the baking sheet with parchment or wax paper. Then, pour the chocolate mixture onto the lined baking sheet. Sprinkle any extra strawberries and coconut on top. You can also drizzle a little more cashew butter on top as well. 
  4. Place the bark in the fridge to firm up. This can take anywhere from 30-45 minutes depending on the thickness or you can just leave it in the fridge overnight. Then, cut the bark into squares and enjoy! Store any remaining bark in a air-tight bag or container in the fridge.
