The Best Healthy Fall Treat: No Bake Pumpkin Spice Energy Bites

The perfect cozy fall treat in one little bite? Sign me up! Nothing screams fall more than a good pumpkin recipe. I like to start the season off with a pumpkin spice cold brew coffee and then move on to cinnamon sugar pumpkin bread as the temperatures cool down and I start craving all things cozy. When I’m in need of a quick treat, these no bake pumpkin spice energy bites are my go-to.

Energy bites are some of my favorite snacks because they are easy to whip up and made with real food ingredients. These are no different. Made with all natural peanut butter, real pumpkin, and wholesome gluten free oats, they are a fun snack that you can feel really good about.

These energy bites are perfect to take on a long trail walk, as an afternoon treat, or as a post-workout snack. Not only are they delicious, these bites are naturally gluten free, dairy free, and vegan. You’ll love them!

Energy Bite Ingredients

These Pumpkin Spice Energy Bites are made with just a few simple ingredients that you likely already have in your pantry which means you can whip them up at any time!

Peanut Butter: The base of these bites is creamy all natural peanut butter. If you have an allergy, or just do not care for peanut butter, feel free to use cashew or almond butter instead. Whatever nut butter you choose to use, make sure it is creamy and has minimal ingredients. Look for peanut butter that only has peanuts listed as the ingredients.

Canned Pumpkin: What makes these energy bites even more delicious is the real pumpkin puree. Canned pumpkin puree is easy to find during the fall months and you will likely see it in the baking aisle. Make sure you grab a can of pure pumpkin puree and not pumpkin pie mix. The only ingredient should be pumpkin.

Chia Seeds: Packed with healthy fats and fiber, these are a great addition to any energy bite.

Chocolate Chips: Dark chocolate chips add a little extra texture and sweetness to these bites. Feel free to leave them out if you prefer.

Pumpkin Pie Spice: Warm, cozy, makes you think of pumpkin pie. Need I say more?

Gluten Free Rolled Oats: Old-fashioned rolled oats, not quick oats, work the best in this recipe. If you need to be absolutely sure that your bites are gluten-free, be sure to use certified gluten free oats.

Maple Syrup: These bites are sweetened with pure maple syrup and the flavor works perfectly with the pumpkin and spice. Feel free to use honey if you do not have maple syrup.

How to Make Pumpkin Spice Energy Bites

Step One: Add the peanut butter, pumpkin purée, maple syrup, and vanilla extract to a mixing bowl and use a wooden spoon to stir until well combined.

Step Two: Next, add gluten free rolled oats, chia seeds, chocolate chips, and pumpkin pie spice to the bowl. Stir until everything is well combined and you have a “dough”.

Step Three: Place the mixture in the freezer for fifteen to twenty minutes to chill and firm up a bit.

Step Four: Remove the dough from the freezer and use a cookie dough scoop to scoop the dough and then use your hands to roll the dough into balls. Store the energy bites in an air-tight container in the fridge or freezer.

How to Store Energy Bites

Because these pumpkin bites are made with real food ingredients and do not have any preservatives, you will need to store them in the refrigerator or freezer to ensure that they stay fresh. My personal favorite way of storing these energy bites is in the freezer.

To freeze the bites, place them on a sheet pan lined with parchment paper and then place the sheet pan in the freezer for an hour or two. Once the bites are frozen, place them in a freezer safe storage container or bag. Keep them in the freezer for up to three months.

Tips, Tricks, and FAQs

  • Chilling the dough a bit makes it easier to handle so you get the perfect little energy bite each time.
  • If you find that your dough is a bit too sticky when rolling you can add a few more tablespoons of oats to the dough.
  • Want to add a few more mix-ins? Hemp hearts, flax seeds, or shredded coconut would all be great additions!
  • If you have a peanut allergy, or just do not love the flavor of peanut butter, feel free to use another nut butter. Cashew butter, almond butter, or sunflower seed butter would all work really well in this recipe. Whichever nut or seed butter you choose to go with, just make sure that it does not have any added sugars or preservatives.
  • Don’t love dark chocolate chips? Feel free to use milk chocolate chips or chunks instead!
  • Want to increase the protein content in these bites? Add in a scoop of your favorite protein powder (vanilla, chocolate, or plain would work best) or plain collagen protein powder.

  3. These are good! I added a combination of butterscotch, white chocolate, and dark chocolate chips. I did not measure. 🙂 When I make them again, I will probably use all butterscotch. The flavor is great with the pumpkin and spice combo.
