Instructions:

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Place the chicken breast on the lined baking sheet, drizzle with olive oil and sprinkle with a little salt and pepper. Bake for 15-20 minutes until the chicken is cooked through then remove from the oven and use two forks to shred it. Set aside to cool. Lower the oven temperature to 350 degrees Fahrenheit.

  2. While the chicken is cooking, in a large mixing add the Good Foods plant-based buffalo style dip, coconut milk, vinegar, lemon juice, buffalo sauce, salt, garlic powder, and onion powder and mix until the sauce is well combined and smooth.

  3. Next, add the shredded chicken, chopped artichoke hearts, fresh dill, and wilted spinach. Stir to combine, then transfer to a small casserole dish and bake in the preheated oven (350) for 30-35 minutes until the outer edges bubble and the dip is heated through. Serve the dip warm with fresh veggies, tortilla chips, or plantain chips. Enjoy!
