One skillet meals are exactly what I need during the week! They are quick, easy, and require minimal clean up which means I can spend more time chilling on the couch watching Netflix and less time doing dishes.

These easy Spicy Vindaloo Meatballs with Rice check all of the weeknight boxes. All you need is one skillet and 30 minutes to whip up this tasty and delicious dinner.

I know the idea of making meatballs may sound a little more complicated than you would like, but just trust me. These meatballs are made with just a few simple ingredients and will take you five minutes to whip up.

Here’s what you need to make the perfect flavorful meatballs:

  • ground pork (you could also sub ground turkey if you prefer)

  • green onions

  • fresh lime juice

  • minced garlic (fresh is best)

  • salt and pepper

  • crushed red pepper flakes (these add a little heat so feel free to leave them out if you prefer)

The star of this recipe is Maya Kaimal’s Spicy Vindaloo Indian Simmer Sauce. This rich and flavorful sauce, pairs perfectly with the meatballs and add just a little heat.

I love using this spicy vindaloo sauce and all of Maya Kaimal’s sauces when I want to get a flavorful dinner on the table but I don’t have a ton of time. This tikka masala recipe is another one of my favorites!

Not only is Maya Kaimal’s Spicy Vindaloo sauce delicious, it is also made from real-food ingredients that I can actually pronounce and trust. There are no weird filler ingredients or preservatives.

This spicy vindaloo simmer sauce is also gluten-free, dairy-free, and vegan. You could easily pair it with fresh veggies or chickpeas to make an easy plant-based dinner.

Perfectly plain rice: the perfect pairing for these meatballs

The obvious pairing for these flavorful meatballs is rice and thankfully, Maya Kaimal has a new line of ready to eat rice to soak up all of that delicious spicy vindaloo sauce. For this recipe I used the Perfectly Plain rice that was hot and ready to eat after just 90 seconds in the microwave!

how to serve your meatballs

I like to serve these meatballs in a bowl (everything is better in a bowl, right?) with warm rice and plenty of vindaloo sauce. The rice and the creamy sauce is the perfect combination.

Also, be sure to sprinkle extra cilantro and green onions on top of your bowl and give everything an extra large squeeze of lime juice to finish everything off!

Spicy Vindaloo Meatballs

Ingredients:

  • 1 pound ground pork

  • 1 1/2 tsp salt

  • 2 cloves minced garlic

  • 2 tbsp sliced green onion

  • 1/2 tsp red pepper flakes

  • juice of one lime

  • cracked black pepper

  • 1/2 tbsp avocado oil

  • 1 cup thinly sliced red onion

  • 1 jar Maya Kaimal Spicy Vindaloo Simmer Sauce

  • 1 cup fire roasted diced tomatoes

  • 1 cup full fat coconut milk

  • Maya Kaimal Perfectly Plain Rice, for serving

  • cilantro, for serving

  • sliced green onion, for serving

  • fresh lime wedges, for serving

Instructions:

  1. Make the meatballs by combining the ground pork, minced garlic, green onions, salt, pepper, lime juice, and red pepper flakes.

  2. Heat a large skillet over medium-high heat. Once hot, coat the pan with avocado oil and then cook the meatballs until browned and cooked through. Remove the meatballs from the skillet.

  3. Pour off any excess oil from the skillet and then add the thinly sliced onion and 1/4 cup of water. Cook on medium heat until the onion has become tender.

  4. Next add the Maya Kaimal Spicy Vindaloo simmer sauce, coconut milk, and tomatoes to the skillet. Stir and bring to a simmer.

  5. Next, add the meatballs back to the skillet and simmer for 15-20 minutes uncovered. While the meatballs simmer, microwave the Maya Kaimal Perfectly Plain rice and set aside.

  6. Finally, serve the meatballs over the rice and enjoy!
