The Simple Ingredients in Pumpkin Spice Energy Bites

These Pumpkin Spice Energy Bites are made with just a few simple ingredients that you likely already have in your pantry. The base of these little bites is creamy peanut butter.

I love the flavor of peanut butter in these treats, but you could always use cashew or almond butter if you would like. Whatever nut butter you use, make sure it is creamy and has minimal ingredients. I like to look for a peanut butter that only has peanuts listed as the ingredients.

What makes these energy bites even more delicious is the real pumpkin puree. Canned pumpkin puree is easy to find during the fall months and you will likely see it in the baking aisle. Make sure you grab a can of pure pumpkin puree and not pumpkin pie mix. The only ingredient should be pumpkin.

The bites are sweetened with pure maple syrup but you could also use honey if you don’t have any maple syrup in the house. To finish making these you’ll just need to add your dry ingredients.

All you need is gluten-free rolled oats, chia seeds, chocolate chips, and of course pumpkin spice.

How to Scoop Your Energy Bites

To scoop my energy bites, I like to use a cookie dough scoop like the one pictured. Using a cooke dough scoop makes it very easy to ensure that each bite is roughly the same size and that you get just the right amount in each little ball.

I prefer to use a tablespoon size scoop for each bite, but you could also make these a bit bigger or smaller if you would like.

The Best Tips for Making Perfect Energy Bites

To make these pumpkin spice energy bites easier to roll, I like to put the dough into the freezer for 5-10 minutes before I begin to scoop and roll them up. Chilling the dough a bit makes it easier to handle so you get the perfect bite.

If you find that your dough is a bit too sticky when rolling you can a few more tablespoons of oats or wet your hands a bit before rolling. I’ve found that chilling the dough usually really helps!

How to store Pumpkin Spice Energy Bites

Because these bites are made with only real food ingredients and don’t have any preservatives, you’ll need to store them in the refrigerator or freezer to ensure that they stay fresh. My preferred method of storing these bites is in the freezer.

They freeze incredibly well in a freezer safe storage container or bag and taste incredible straight out the freezer.

Method: 

  1. Add the peanut butter, pumpkin purée, maple syrup, and vanilla extract to a mixing bowl and stir until well combined.

  2. Add in the rolled oats, chia seeds, chocolate chips, and pumpkin spice and stir until you have a dough.

  3. Place the mixture in the freezer for five minutes.

  4. Remove from the freezer and roll into balls. Store in the freezer for the ultimate freezer stash!
