Anyone else like me and prefer a savory breakfast over sweet? I much rather have a few pieces of sausage, veggies, and eggs for breakfast over a sweet pastry. But, there are some days when I’m craving something sweet and carb-y like a muffin for breakfast. On those days, I still want to keep my first meal of the day healthy. I don’t feel my best when I start the day off with a super sugary breakfast, so if I’m going to do a sweet breakfast, it’s important for me to keep the sugar low and the nutritional value high.

These easy gluten-free blueberry banana muffins are packed with mashed bananas, fresh blueberries, and lightly sweetened with coconut sugar. They’re sweet, but not too sweet, which makes them the perfect little muffin to serve at breakfast or even as an afternoon snack.

These healthy muffins are made in one bowl which means it won’t take you any time at all to whip them up. To make these muffins you’ll need:

  • gluten-free oat flour (you can make your own by blending gluten-free rolled oats in your blender or food processor until they turn into flour)

  • plain greek yogurt

  • bananas

  • coconut sugar

  • vanilla extract

  • blueberries

The plain greek yogurt keeps these muffins tender and moist, while also packing a punch of protein. If you would like to keep these muffins dairy-free, you could also use a plain dairy-free almond or coconut milk greek yogurt.

I like to make a batch of these muffins Sunday afternoon and store them in the freezer for the week ahead. Just make a batch, let them come to a cool, and then place in a freezer bag to store in the freezer. When you’re ready to eat a muffin, just heat one in a warm oven. I usually put my muffin in an oven while I let the it preheat to 350 degrees. A few minutes after the oven has preheated, the muffin is usually warmed through and ready to eat.

  1. Preheat oven to 350 degrees. 

  2. Combine all of the ingredients, except the blueberries, in a mixing bowl until you have a smooth batter. Next fold in the blueberries.

  3. Transfer the batter to a greased or lined muffin tin. Fill each muffin well two-thirds of the way full. Top each muffin with a few more blueberries.

  4. Bake at 350 degrees for 15 to 20 minutes or until a toothpick comes out clean.

  5. Serve them warm, straight out of the oven, or enjoy them the next day. Pro Tip: These also freeze really well!
