Making homemade nut butter is one of my new favorite things to do. The process is surprisingly simple and easy, and the results are always ten times better, in my opinion, than a store bought nut butter. While there are some great nut butters available to you on store shelves these days, making your own allows you to completely customize the flavors and ingredients to fit your exact needs and preferences. This homemade honey roasted peanut butter is no different.

Did you know that peanuts are technically a member of the legume family and not actually a nut? Technically peanuts are closer to a bean or lentil than an actual nut like an almond or cashew. Whatever family they belong to, I think we can all agree that they are absolutely delicious when they’re ground up to make a creamy butter.

Peanut butter is everyone’s favorite butter and this honey roasted version takes things to the next level. It’s smooth, creamy, not overly sweet, and has that honey roasted flavor that everyone loves. Out of all the nut butters you can make at home, peanut butter is one of the least expensive and easiest to make. In a high-powered blender or food processor, the peanuts become so smooth and creamy without much effort.

When you think of peanut butter, you might automatically think of the classic PB&J sandwich, but there are so many other ways to incorporate this delicious butter into your daily life. Here are some of my favorite ways to use this honey roasted peanut butter:

  • Eat it as a snack with a granny smith apple dusted with cinnamon

Honey Roasted Peanut Butter (Vegan)

This honey roasted peanut butter is so incredibly simple and made up of only three simple ingredients. You may actually have everything you need to make this peanut butter in your pantry now!

To make this honey roasted peanut butter recipe, you’ll need:

  • peanuts

  • honey

  • coconut oil

  • pinch of salt

This recipe is designed to have a hint of sweetness, but you could easily omit the honey all together for a plain peanut butter without any sweetness. This recipe is great for snacking or including in sweet recipes, but a plain peanut butter would be my preference for salad dressings or savory dishes.

I make this peanut butter in my high-powered Vitamix blender, that we received as a wedding gift, which makes the process of making this peanut butter incredibly easy. The higher powered blender or food processor you have the quicker and easier it will be to make any nut butter, but that doesn’t mean you shouldn’t give making this peanut butter a try! Just remember to be patient and keep processing or blending the butter until it becomes the smooth and creamy consistency that you’d like!

Honey Roasted Peanut Butter (Vegan)

Ingredients:

  • 16oz peanuts

  • 1 tbsp honey

  • 1 tbsp coconut oil

Instructions:

  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper

  2. Combine the peanuts and honey in a large mixing bowl and stir until the peanuts are coated with the honey.

  3. Spread the peanuts in an even layer on the lined baking sheet and roast for 13-15 minutes or until they've begun to caramelize and brown. Remove them from the oven and let cool.

  4. Place the cooled peanuts in the bowl of a food processor or high-powered blender along with the coconut oil. Process or blend the peanuts until creamy, scraping down the sides as necessary. The time will vary here depending on what kind of food processor or blender you have. Just keep going until the peanuts turn into a creamy butter. If your peanut butter is having a hard time becoming creamy, try adding another tablespoon of coconut oil.

  5. Transfer the peanut butter into a jar and store in the fridge.
