Y'all! Fall is almost here and I am so excited about it. Are you someone who never wants summer to end or are you ready for all things fall? Here in North Carolina, the temperature is starting to drop just a bit, the kids are going back to school, and I’m already thinking about all of the delicious fall recipes.
One of my favorite ingredients to use during the cooler months is of course pumpkin! Canned pumpkin is incredibly versatile and makes some delicious baked goods like muffins, breads, and bars. Pumpkin baked goods are so popular this time of year, but did you know that you can also include pumpkin in savory dishes as well?
Pumpkin is actually a part of the squash family (think spaghetti squash, acorn squash, and butternut squash) and actually has somewhat of a mild flavor, which makes it a great addition to chili. This easy pumpkin chili incorporates pumpkin puree for extra fiber and helps give this chili a hearty texture that I know you’ll love.

Be sure to grab pureed pumpkin at the grocery store and not pumpkin pie filling. Pumpkin pie filling will have added sugar and other ingredients. Check your labels and make sure that the only ingredient is pumpkin.

You can make this easy chili on the stove-top in around 30 minutes. Of course, the longer you let it simmer, the better it is and, as usual with soups and stews, it tastes even better the next day. If you need to make this recipe in the slow cooker here are a few simple tips:

Easy Pumpkin Chili
1 lb lean ground beef
1/2 small yellow onion, diced (roughly 1/2 a cup)
1/2 green bell pepper, diced (roughly 1/2 a cup)
2 cloves garlic, minced
1 can kidney beans
1 cup pumpkin puree (not pumpkin pie filling)
1 1/4 cup beef or veggie broth
1 tbsp cumin
1 tbsp chili powder
2 tsp cocoa powder
2 1/2 tsp salt
1 tsp paprika
1/2 tsp oregano
1/4 tsp chipotle powder
Heat the oil in a heavy bottomed pot over medium high heat. Once the oil is hot, add the peppers, onions, and garlic and cook for a few minutes until they become fragrant.
Next, add the ground beef, salt, and spices, breaking the beef up as it cooks.
Next, add in the, tomatoes, beans, pumpkin puree and veggie broth. Stir until well combined.
Bring to a boil and then reduce the heat to low and let the chili simmer for 30 minutes.
Serve with your favorite toppings like red onion, sour cream, and cilantro.
