easy plant-based cauliflower tacos that are full of flavor

Cauliflower tacos! Before you immediately exit stage left at the idea of cauliflower replacing meat in a taco recipe, here me out. I was once where you might be right now. Refusing to get on the whole ‘cauliflower as a meat substitute’ because I just could not, ya know?

You may have guessed it by now, but I’m big fan of meat and there is absolutely no shame in my game. That being said, I was seriously intrigued by the idea of cauliflower tacos. I know a lot of people who follow a plant-based diet, plus I’m always trying to get more veggies in my own diet. One of the best ways to incorporate more fruits and veggies is to use them in creative and fun recipes. These chipotle cauliflower tacos with spicy lime tahini is a great way to do that!

I was determined to make these tacos as hearty and flavorful as possible, because if I’m going to share a cauliflower recipe with you, it’s going to have to be absolutely delicious and filling. Once roasted, the cauliflower actually takes on this meaty texture that’s really reminds you of a traditional chicken taco. Thankfully, not only are these chipotle cauliflower tacos hearty and filling, they’re also incredibly easy to make and a quick dinner option. All you do is toss the cauliflower in spices, roast for fifteen minutes, and then load up warm corn tortillas with the delicious roasted goodness and all of the fixings.
