This simple berry chicken salad is easy to whip up and made with a few fresh and flavorful ingredients that you likely already have in your fridge during the summer season:

What I love about this salad is that you can make a few chicken breasts at the start of the week and then assemble the salads as needed. Berry Chicken Salad with Honey Lime Vinaigrette

Ingredients

For the Salad:

  • 2 boneless skinless chicken breast (one for each salad)

  • 1/2 tbsp avocado oil

  • paprika

  • chili powder

  • garlic powder

  • mixed greens

  • baby spinach

  • strawberries

  • rasberries

  • blueberries

  • blackberries

  • sliced almonds

  • feta cheese

  • avocado

For the Honey-Lime Vinaigrette:

  • 1/2 cup olive or avocado oil

  • 1/4 cup lime juice

  • 2 tbsp minced shallot

  • 2 tbsp honey

  • 1 clove garlic

  • 1 tsp salt

  • fresh cracked black pepper

Instructions:

  1. Heat a skillet over medium-high heat. While the skillet is heating, season the chicken breast with a few shakes of garlic powder, salt, pepper, paprika, and chili powder. When the skillet is hot, add in 1/2 tbsp of avocado oil and then add the chicken breast. Cook the chicken for 4-6 minutes on each side until cooked through. Let the chicken rest while you assemble the salad and dressing.

  2. To make the vinaigrette, add all of the ingredients to a high-powered blender and blend until smooth.

  3. Assemble the salads with greens, berries, cheese, almonds, avocado, and sliced chicken breast. Drizzle the vinaigrette on top and enjoy!
