Sheet pan meals! Breakfast, lunch, or dinner, they’re all the rage right now and I can see why!

I mean what’s better than a meal made entirely on one sheet pan? It almost seems too good to be true. This easy chicken sausage and potato sheet pan supper takes easy to a whole new level. All you have to do is dice a few potatoes, toss them in oil and spices, and then place them in the oven to roast. Give them a flip, add a few links of your favorite chicken sausage, roast another 20 minutes and breakfast is done!

I’m calling this a breakfast sheet pan because chicken apple sausage is kind of a breakfast staple in our house. Pairing it with roasted potatoes just seemed like a no brainer kind of breakfast meal idea for me. This recipe uses a medley of sweet potatoes, Japanese sweet potatoes, and russet potatoes to keep things interesting. The addition of the peppers and onions gives everything even more delicious flavor!

The best part about this sheet pan recipe is that you can serve it for breakfast, lunch, or dinner! Here are some of my favorite ways to serve it:

  • add a fried egg and fresh fruit for breakfast

  • add a fresh side salad with veggies for lunch

  • add roasted veggies (broccoli and brussels sprouts are my fave) for a hearty dinner

Chicken Sausage & Potato Sheet Pan Breakfast

Ingredients:

  • 2 tbsp olive oil

  • 1 medium russet potato, peeled and diced⠀

  • 1 medium sweet potato, peeled and diced ⠀

  • 1 medium Japanese sweet potato, peeled and diced⠀

  • 1/2 cup diced red bell pepper⠀

  • 1/2 cup diced green bell pepper⠀

  • 1/4 cup diced yellow onion ⠀

  • 1 1/2 tsp salt

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 3-4 links chicken sausage (this is my favorite)

Method:

  1. Preheat your oven to 425 degrees. Toss the potatoes and peppers in the olive oil and spices. Spread them in an even layer on a sheetpan lined with parchment paper. Roast at 425 degrees for 20 minutes and then give the potatoes a flip/stir.

  2. Add the chicken sausage to the sheetpan and return to the oven. Bake for another 20-25 minutes until the potatoes are cooked through and crispy. Enjoy with scrambled eggs for breakfast or a big salad for lunch!⠀
