I’m talking about delicious, hearty, filling salads that are full of flavor, veggies, and healthy fats to keep you feeling full. Because, the worst thing is eating a salad and being hungry just minutes later. THE WORSTTTTT.

Thankfully, this chopped salad is far from wimpy or boring, and it will definitely keep you feeling full for longer than 20 minutes. Let me tell you what this chopped salad has got going on:

This hearty chopped salad has the perfect combination of flavors that will make your tastebuds do a happy dance, and who doesn’t want that?! The best part is that the salad itself is actually incredibly easy to make. The only thing you actually have to cook is the chicken and bacon! HELLO EASY.

Since there’s not a ton of cooking involved, this salad is a perfect option for your weekly meal prep! Just spend a little time on Sunday to cook a batch of the chicken and bacon and then you can have a hearty salad in just a few minutes during the week.

You could get creative here and use whatever salad dressing you like (I think the lemon garlic dressing would be divine) but there’s something so delicious about a good tahini dressing. If you’ve never tried tahini before, I highly recommend giving the recipe a try. It’s herb-y, and lemon-y, and tahini-y, and just so dang delicious.

Chicken, Bacon, Avocado Chopped Salad with Lemon Herb Tahini Dressing

Ingredients:

  • 2 tbsp avocado or coconut oil

  • 1 pound chicken breast cut into small chunks

  • 1 tsp pink sea salt

  • 1/2 tsp garlic powder

  • 1/4 tsp crushed red pepper flakes

  • 1/4 tsp dried oregano

  • sprinkle of black pepper

  • 2-4 slices of cooked bacon, for the salad

  • mixed greens and romaine lettuce, for the salad

  • sliced cucumbers, for the salad

  • diced avocado, for the salad

  • sliced red onion, for the salad

  • sliced pink lady or honeycrisp apple, for the salad

  • one batch of Lemon Herb Tahini Dressing

Method:

  1. Season the chicken breast with salt, garlic, crushed red pepper, oregano, and pepper. Next, heat a skillet over medium-high heat. When the skillet is hot add the oil and then the chicken. Cook the chicken breast roughly 3-4 minutes on each side, until brown and no longer pink, and then remove from the skillet.

  2. While the chicken is cooking assemble the salads with mixed greens, avocado, cucumber, red onion, apple, and bacon.

  3. Once the chicken is done, add it to the salads and drizzle with lemon herb tahini dressing. Enjoy!
