In my personal opinion, crispy potatoes are what every single weekend breakfast plate needs. There’s just something about a crispy potato that just makes breakfast come alive for me. Can you relate? I’m definitely team savory over sweet breakfast ninety percent of the time. Just give me potatoes (with a generous squeeze of ketchup), bacon, and eggs over pancakes any day. It’s like heaven on a plate.

Crispy, hot, well seasoned potatoes are a show stopper on their own, but there are a few things that can take them to the next level. And I don’t know about you, but I’m here for anything that can take a crispy potato to another level. Thankfully, with just a few fresh herbs, garlic, and a sprinkle of parmesan cheese you can turn ordinary potatoes into extraordinary potatoes.

These garlic parmesan potatoes start with yukon gold potatoes. They have a slight sweetness, get crispy on the outside, and when they’re cooked they have a buttery creamy center that is just everything.

After you roast the potatoes for thirty to forty minutes, you add freshly minced garlic to the pan and roast for a little longer. The fresh garlic adds a huge punch of flavor and roasting it for just a little bit gives it a delicious mild flavor so you won’t feel like you bit into a fresh garlic clove.

Next, you toss the potatoes in fresh herbs and parmesan cheese. Doesn’t that sound incredible?! Lastly, put the potatoes back in the oven to let the cheese get all melty and delicious and perfect and then eat!

  • 5 yukon gold potatoes, diced

  • 2 tbsp avocado oil

  • 1 tsp salt, plus more to taste

  • 1/4 tsp crushed red pepper flakes

  • 2 cloves garlic, minced

  • 2 tbsp chopped green onion

  • 1 tbsp chopped parsley

  • 1/4 cup shredded parmesan cheese (omit if you need a Whole30 or dairy-free option)


  1. Preheat your oven to 425 degrees. Toss the diced potatoes in the avocado oil and arrange them in a single layer on a large sheet pan lined with parchment paper. Roast the potatoes for 30-40 minutes, flipping halfway through, until they are beginning to turn golden brown and starting to get to crispy.

  2. Add the minced garlic to potatoes and give them a stir. Return the potatoes to the oven for 5-10 minutes until the potatoes are crisp and the garlic begins to turn golden brown.

  3. Remove the potatoes from the oven and add the salt, green onions, red pepper flakes, parsley, and parmesan cheese. Return to the potatoes to the oven for a few minutes until the cheese begins to melt. Remove from the oven and serve immediately. Enjoy!
