Roasted Asparagus with Lemon (Whole30, Paleo, Vegan)
On my goals this year is to share more simple recipes on the blog that can become staples on your weekly menu. I’ll be the very first person to tell you that not every recipe you make has to be complicated or include multiple steps. Most of the time, you only need one skillet or a sheet pan to create delicious satisfying and healthy food.
Repeat after me - IT DOESN’T HAVE TO BE COMPLICATED.
Not only does keeping your meals simple and easy save time, it also encourages you to continue to make healthy, fresh, home cooked food. You are way less likely to spend time in the kitchen when you associate cooking with complicated recipes that have thousands of steps and take hours to make.
One of the things that I like to do is include really easy vegetable sides in my meals. While the main dish or protein may take a little more hands on time, pairing it with a simple roasted veggie helps cut down on the overall time it takes to make a meal. Some of my favorite veggies to roast include, sweet potatoes, broccoli, white potatoes, brussel sprouts, and asparagus.
Asparagus is a quick cooking vegetable that pairs perfectly with fresh lemon. This recipe is really more of a method than a recipe because it’s just that simple. Let’s get into it.
First, you’ll start by trimming 1/4 inch from the bottom of your asparagus. Then, place the asparagus on a baking sheet lined with parchment paper. Don’t skip the parchment paper step. It makes for the easiest clean up which will save you a ton of time.
Next, give the asparagus a good drizzle of olive oil and season with salt, pepper, and garlic powder. Then, before it goes in the oven squeeze the juice of a lemon over all of the asparagus, add some lemon slices, give it a toss, and place in a 425 degree oven.
After twelve to fifteen minutes, the asparagus will be just the right amount of tender yet crisp. There’s nothing like limp overcooked vegetables and when you roast it like this, you won’t get those results. The best part is that the lemon juice really takes this simple method to the next level.
I’m telling you my friend, all you really need is just a few simple seasonings and fresh lemon to make these asparagus absolutely delicious. I mean look at that beautiful char!
Finally, you can remove the asparagus from the sheet pan and place them on a serving plate with the roasted lemons on top for an elegant touch that will make it look like you did more work than you actually did. Isn’t that the best trick? Ha! Serve those beautiful asparagus spears immediately alongside your favorite protein (salmon would be delish) and enjoy!
Lemon Roasted Asparagus
1 tbsp olive oil
1 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
juice of a lemon
1/2 pound Asparagus spears, trimmed and ready
Preheat an oven to 425 degrees.
Line a sheet pan with parchment paper and place the asparagus on the sheet pan in a single layer. Drizzle the asparagus with the olive oil, salt, pepper, garlic powder, and lemon juice. Toss the asparagus until it’s well coated.
Roast the asparagus for 12-15 minutes until is tender but still has a slight crunch and the tips have started to brown. Enjoy!
