You can also keep Tex-Mex pretty healthy! For your weeknight meals, opt for fresh veggies, flavorful chicken, and avocado and skip the nacho cheese sauce. Your meals will still be packed with flavor and you can always indulge in those nachos on the weekends!

These easy Chipotle-Lime Chicken thighs are packed with flavor, Whole30-friendly, and will only take you a few minutes to put together. The chicken is seasoned with flavorful spices like chipotle powder, cumin, and oregano, and then marinated with lime juice and apple cider vinegar. There may only be a few ingredients in this recipe, but they all pack a punch!

This recipe uses boneless skinless chicken thighs which are incredibly flavorful and easy to cook. If your chicken breast usually turns out dry and lifeless, give boneless skinless chicken thighs a try! They're almost impossible to overcook (ok, it's possible but hard!) and they're also a bit cheaper than thighs. Organic boneless skinless chicken thighs are often much less expensive than organic chicken breasts.

The best thing about this recipe is that you can use it in more ways than one, which is great for meal prep. You can make a batch at the beginning of the week and then use it in several different recipes throughout the week which saves you time and money. 

Since the chicken is so flavorful, it'is great on its own served with a side of rice and beans (cauliflower rice would great if you're on a Whole30!) or you can add it to mixed greens, fresh veggies, and a little avocado to make your favorite salad. You could also try getting even more creative and chop up the chicken for tacos, fajitas, or enchiladas. This quick and easy chicken is a great blank slate for so many different meals and the possibilities are limitless!

  • 1-2 tbsp oil

  • 6 boneless, skinless chicken breast

  • 1 tsp apple cider vinegar

  • 1 tbsp lime juice

  • 1 tsp salt

  • 1/2 tsp chipotle powder

  • 1 tsp garlic

  • 1/2 tsp cumin

  • 1 tsp onion powder

  • 1/2 tsp chili powder

  • 1 tsp oregano

  • 1/2 tsp paprika


  1. Combine all of the ingredients except the oil in a large mixing bowl. Let the chicken marinade for 30 minutes to 1 hour.

  2. When you're ready to cook the chicken, heat a pan over medium-high heat. When the pan is hot, add the oil.

  3. Add the chicken to the hot pan and cook on each side for 6-7 minutes on each side until the chicken is cooked through. Serve the chicken over mixed greens with your favorite dressing for the perfect salad!
