I'm currently on my way to Charleston, SC, but before I signed off for the weekend I had to share this shredded salsa chicken with you because you need this in your life! 

This recipe is EASY. You hear me? So easy, in fact, that I'm not even sure that it qualifies as a "real" recipe, but we all know that those are the best kind.

Besides being easy, my second favorite thing about this recipe is how versatile it is. One pot of this shredded salsa chicken can be used on salads, in tacos, enchiladas, or so much more. 

If there is one common complaint I hear about meal prep time and time again is that people get bored with their food. Recipes like this give you the opportunity to make several different meals without having to spend all of your time in the kitchen. 

You probably already have all of the ingredients you need to make this easy recipe, but just in case you don't go ahead add what you need to your grocery list for next week. Bonus, this shredded salsa chicken is Paleo, gluten-free, and Whole30 compliant if you use a compliant salsa!

Meal Prep Salsa Chicken


  • 2 boneless, skinless chicken breast
  • 1 cup salsa
  • 1/4 tsp ground cumin
  • 1/4 tsp sea salt 
  • 1/4 tsp garlic powder


Stovetop: Add all of the ingredients to a pot and bring to a boil. Reduce the heat to low and let simmer for 30-45 minutes until the chicken is tender and easily shreddable with two forks

Slow cooker: Add all of the ingredients to your slow cooker and let cook on high for 4-6 hours or on low for 6-8 hours until the chicken is tender.
