This week's Sunday Staples post is dedicated to all the mamas. All the Grandmas, Aunties, God Mama's, Sisters, and women who have loved, mothered, and encouraged. I'm positive you've told someone to eat more veggies at least once in your life.

Part of the reason why our mamas had to tell us to eat our veggies over and over again is probably because they may not have tasted that good in the first place. Not knocking mama but, roasting veggies just wasn't as much of a "thing" back then. And let's be real, no one is super excited about sitting down to a plate full of steamed veggies. If you are, then you're a special somebody and probably extra special in your mama's eyes. 

In last week's post, we talked about how steaming and boiling is so 2003. Roasting veggies takes them to a whole new level and it's time we all step out of our comfort zone, turn on our ovens and get to roasting. Steaming and boiling is just the tip of the ice berg when it comes to vegetables. Roasting is where the magic happens, y'all. 

When it comes to roasting veggies, broccoli is one of the best. It's a hearty, strong veggie, similar to the Brussels sprout. Broccoli and Brussels are actually both in the brassica family. They're kind of life vegetable cousins. 

Roasting broccoli gives you the tenderness that comes from steaming or boiling but, you also get added flavor and, the best part, these perfect crispy broccoli edges that are absolutely delicious. Those brown bits on your roasted broccoli are packed full of so much flavor, you'll want to be best friends with them.

This recipe for simple roasted broccoli is sure to become a staple in your kitchen. Broccoli pairs perfectly with so many proteins and this method is a super quick way to get a green veggie on the table. It'll take you 15-20 minutes tops! Just a little salt, pepper, and garlic is really all you need for the best roasted broccoli. If you like lemon, a little fresh squeezed lemon juice at the end is delicious too! 


Simple Roasted Broccoli

This simple roasted broccoli is an easy side dish that can be paired with just about any meal. If you need a tasty new way to incorporate more veggies in your diet, try this! 

Ingredients: 

  • 2 cups fresh broccoli florets
  • 3-4 tablespoons melted ghee, olive oil, avocado oil
  • 1/4 tsp salt + more to taste
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • fresh lemon juice (optional)

Method

  1. Preheat oven to 425 degrees. 
  2. Cut any larger broccoli florets in half to make sure all of the broccoli is roughly the same size. 
  3. Place the broccoli in a large mixing bowl. Add in the oil, salt, black pepper, and garlic powder. Toss until the broccoli is well coated in the oil and seasoning. 
  4. Transfer the broccoli to a large sheet pan and bake for 15-20 minutes, flipping halfway through. The broccoli should be tender and a little browned around the edges. (Tip: give the broccoli a taste halfway through to see if it needs more salt, pepper, or garlic and make any adjustments)
  5. Finish with a squeeze of fresh lemon juice, serve immediately and enjoy!
