Sweet Potato and Sausage Frittata

I would like to introduce to you the Sweet Potato and Sausage Frittata. The most delicious breakfast combo EVER. Because honestly, what could be a better breakfast than a combination of savory sausage, hot saucey eggs, and sweet potatoes? The answer is NO-THING, my friend!


Frittatas are one of my go-to breakfast recipes for feeding multiple people or for meal prep. They’re ridiculously easy to make, flavorful, and versatile. This sweet potato and sausage combo is one of my personal favorites, but you could throw just about any of your favorite veggie and protein combinations together and get an excellent result every single time.

After you make this recipe once, you’ll officially be a pro frittata maker - they’re just that easy. You’ll start dreaming of different frittata combinations. Making them in your sleep. That sort of thing. Ok, maybe not. But, seriously. Frittatas are easy. Don’t be intimated by their somewhat complicated name.

Ok, let’s get into this sweet potato and sausage frittata.

You start with your favorite ground pork sausage. If you’re like me, you’ll go for a spicy version of your fave. Gimme all the extra flavor.

Next up, is the sweet potatoes. Small, diced, orange cubes of deliciousness. You could use regular white potatoes but that would be boring. Don’t be boring. The sweet potatoes cook with the sausage so they soak up all of that yummy sausage goodness. Clearly, the sweet potatoes are living their best life, here.

Then, it’s time for the onions. Half a sliced onion to be exact. At this point, your house is going to smell AH-MAZING. I warned you. Next, it’s all about freshly chopped spinach, and then a creamy flavorful egg mixture poured over top of everything. There’s hot sauce in the eggs. You may be tempted to leave it out and to that I’ll tell you…don’t be boring.

Finally, you’ve got around 15-20 minutes of baking the whole skillet in a 350 degree of oven and then it’s time to eat. See? I told you that was easy!

  • 1 tbsp avocado (I love this brand)

  • 1 1/2 cup diced sweet potatoes

  • 1/2 pound ground pork sausage

  • 1/2 medium onion, thinly sliced

  • 3 oz fresh spinach, chopped

  • 6 eggs

  • 1/2 c light canned coconut milk (I use this one)

  • 1 tsp salt

  • 1/4 tsp fresh black pepper

  • 1/2 tsp garlic powder

  • 1 tsp hot sauce (this is my favorite)


  1. Preheat your oven to 350 degrees and heat a large oven safe non-stick skillet over medium heat. When the skillet is hot, add in the avocado oil and then the ground sausage. Brown the sausage, breaking it up as it cooks.

  2. When the sausage has browned, add the diced sweet potatoes to the skillet. Cook the potatoes until they start to become tender, stirring them occasionally.

  3. While the sweet potatoes are cooking, make your egg mixture. In a large mixing bowl, whisk together the eggs, coconut milk, salt, pepper, garlic and hot sauce. Set the mixture aside.

  4. Once the sweet potatoes have become tender, add the sliced onions to the skillet and cook until translucent and tender. Around 3-4 minutes. Then, stir in the chopped spinach until well combined.

  5. Next, evenly pour the egg mixture over the sausage and veggies. Bake the frittata for 15-20 minutes until the egg is completely set. Remove from the oven and let cool for 5-10 minutes before serving. Enjoy!
