Easy Spinach + Sausage Egg Muffins

These Spinach and Sausage Egg Muffins are Whole30 compliant and so easy. This is the perfect recipe to meal prep on a Sunday or Monday and then heat and eat throughout the week. Oh, and they're totally customizable! Add cheese, switch out the veggies, change the meat, these little bites of deliciousness are just what you need to make breakfast even easier!

Easy Spinach + Sausage Egg Muffins

Ingredients:

  • 4 oz cooked sausage

  • 1/4c diced red bell pepper

  • 1/4c diced onion

  • 2 handfuls chopped baby spinach

  • 4 eggs

  • 1/4c light canned coconut milk

  • 1 tbsp hot sauce

  • sprinkle of salt and pepper

Method:

  1. Preheat oven to 375 degrees.

  2. In a large mixing bowl, combine the eggs, milk, hot sauce, and salt + pepper, and whisk well.

  3. Stir in cooked sausage, peppers, onion, and spinach. Divide mixture evenly among 8 greased muffin cups. Bake at 375 degrees for 18-20 minutes or until the center are set and the muffins begin to brown.
