Buffalo Chicken Salad

Do y'all love buffalo sauce as much as I do? I often find myself just pouring buffalo sauce on a chicken breast if I don't have a clue what to eat for dinner. A good sauce will instantly transform your meal from boring to "oh my gosh I can't stop eating this" and that's exactly what buffalo sauce does for me. 

This buffalo chicken salad is one of my favorite things to make for lunch throughout the week. I've always got a chicken breast or two in my freezer and once they're cooked, this chicken salad takes just a few minutes to whip up. If you need something quick, tasty, and easy for this busy back to school season then this is it. This stuff basically tastes like buffalo wings without all the mess and who doesn't love buffalo wings?!

My favorite way to serve this chicken salad is on top of mixed greens with some of my favorite salad veggies like tomatoes, cucumbers, and purple cabbage. It's great as a sandwich or in lettuce wrap, and it makes the perfect afternoon snack with some celery, carrots, or your favorite crackers.

Buffalo Chicken Salad

Buffalo Chicken Salad

Ingredients: 

  • 2 cooked chicken breasts, cooled and chopped (you can use boneless, skinless chicken breasts or leftover bone-in roasted chicken breasts)
  • 1/4 cup mayonnaise 
  • 2 tbsp buffalo sauce (this is my favorite)
  • 1/4 tsp garlic powder 
  • pinch of cayenne pepper (plus more if you like extra kick)
  • 1 tbsp chopped fresh dill 
  • 1 tbsp chopped fresh chives 

Method:

  • Mix all of the ingredients until well combined. Serve on top of mixed greens as a salad, with crackers, make a sandwich, the options are endless. Get creative my friends.
