If y'all haven't figured it out yet, I am all about healthy snacks. Honestly, if there's one piece of advice I would give someone trying to eat a healthier diet, it would be to always, always, always have healthy snacks on hand. Whether that's hummus and veggies in your fridge, a piece of fruit in your purse or backpack, or a protein bar in your glove compartment, snacks are important.

Getting hungry, without a real meal anywhere in sight, is when the rubber meets the road with this whole healthy eating thing. When you get hungry, you're less likely to make healthy choices, which is why having a good snack that you can just grab and eat is so important. I repeat SNACKS ARE IMPORTANT. That's the point I'm trying to drive home here, haha.

This roasted red pepper hummus is a great snack to keep in the fridge for a quick bite after work or school. All you have to do is make this on Sunday, chop some fresh veggies, and BOOM - instant snack option for the week. You could always buy pre-made hummus and there's tons of good options out there now. My personal favorites are Hope Foods Spicy Avocado and Jalapeño Cilantro hummus (so good!), but buying hummus all the time can get pricey, especially when you think about how easy and cheap it is to make yourself.

Simple Roasted Red Pepper Hummus

Ingredients

  • Chickpeas (1 15oz can)
  • 1 tbsp tahini 
  • 1 tsp salt
  • 2 tbsp olive oil
  • Juice of half a lemon 
  • 2 cloves garlic 
  • 1/2 cup roasted red pepper (around 2-3 pieces)

Method

  • Place all of the ingredients in a food processor and pulse until smooth. Serve with your favorite veggies or pita. Store in the fridge for up to a week!
