Avocado Cilantro-Lime Dressing

I love this dressing. Like seriously LOVE this stuff. The first time I made it I couldn't stop licking it off the spoon because it was just that good. Y'all don't do that?

Honestly, I have my boyfriend to kind of thank for this recipe. He's a weirdo and doesn't like mayonnaise, so I had to create a dairy-free "ranch" without the mayo that was still thick and creamy. But before I get into the details, seriously, who doesn't love mayo? Am I only one who loves it.  I'm not talking about that Miracle Whip stuff either. If you're still using Miracle Whip stop what you're doing and get yourself some REAL mayo made with a few simple ingredients. My favorite mayos brands are Sir Kensington's and Primal Kitchen's Chipotle Lime mayo. Both are so good. Apparently it's also really easy to make your own mayonnaise from scratch, but I haven't tried that just yet. Long story short, get some real mayo and use it liberally. Or not. Do you.

But enough about mayonnaise. For all of you who aren't fans of my favorite condiment, there's none in this dressing which means that it's just right for YOU. I was never really in love with the consistency of the dairy-free ranch I was making my boyfriend. It tasted good, but the consistency was a little too thin for me. I tried adding less mayo, using less coconut milk, just coconut cream, more herbs, etc. but nothing ever really gave me that thick consistency I was looking for. A few weeks ago I decided to add an avocado to the mix and it came out perfectly. Creamy, tangy, and completely dairy-free!

I love how versatile this dressing is. You can use it as a simple salad dressing for your favorite salad, as a crema for tacos, tostadas and taco salads, or even as a dip for wings. I'm sure you could find a million more uses for it, but those are just a couple of my favorites. As always, let me know what you think if you make this! I hope you love it as much as I do.

Avocado Cilantro Lime Dressing

Ingredients:

  • 1 avocado
  • 1/2c light coconut milk 
  • 1/2c cilantro
  • 1/2c parsley
  • 2 cloves of garlic
  • juice of 2 limes
  • 1 tsp pink sea salt 
  • 1/2 - 1 tsp red pepper flakes (start small if you don't like a lot of heat or leave it out completely)

Method:

  • Add all of the ingredients to a blender or food processor and blend until smooth. Keep in the fridge for up to a week.
