Gluten Free Coconut Chocolate Chip Cookies

I tweaked my mom's recipe for traditional chocolate chip cookies to make these gluten-free crowd pleasing cookies! They were a hit with my family and I'm sure they'll be a hit with yours!

Gluten Free Coconut Chocolate Chip Cookies

Ingredients

  • 2 3/4 c gluten free all purpose flour (I used this kind) 
  • 2 sticks butter
  • 1 c granulated sugar
  • 1 c brown sugar 
  • 1 tsp molasses
  • 1t sp vanilla extract
  • 2 eggs
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 c chopped nuts (I used pecans)
  • 1 c shredded sweetened coconut 
  • 2 c semi-sweet chocolate chips

Method

  1. Preheat the oven to 350 degrees
  2. Cream the butter, sugar, and molasses until fluffy. Add in the vanilla + eggs and cream again until fluffy. 
  3. Add the flour, salt, and baking soda and mix until well combined and a dough has formed. Then add in nuts + coconut and mix well. Add the chocolate chips and mix for 30 seconds. 
  4. Use a tablespoon or cookie scoop to drop the cookies 2 inches apart on a cookie sheet lined with parchment paper. Don't flatten them out. Bake for 12-15 minutes until golden brown.
