White Chocolate Peppermint Bark

There's nothing that says Christmas to me more than White Chocolate Peppermint Bark. My mom used to get this every Christmas as a gift from her students and because I'm the only one in the family who really loves the mint and chocolate combo, it was ALL MINE. 

Last year, I decided to make white chocolate peppermint bark from scratch as a gift for my co-workers. I was surprised at how easy it was and how much better it is than the stuff you buy from the store. You literally only need chocolate, peppermint extract, candy canes, a sheet pan, and some parchment or wax paper. Get together with your family + friends this Christmas and make this!

White Chocolate Peppermint Bark 

White Chocolate Peppermint Bark

Ingredients:

  • 2 cups semi-sweet chocolate chips
  • 2 cups white chocolate chips
  • 1 tsp peppermint extract (divided)
  • 6 crushed candy canes + a little extra for the top

Tools: 

  • baking sheet
  • parchment or wax paper
  • microwave safe bowls 

Method: 

  1. Pour the semi-sweet chocolate chips In a microwave safe bowl. Microwave the chocolate for 30 seconds at a time until it's melted, stirring each time. Add in a 1/2 tsp peppermint extract and stir. Pour the semi-sweet chocolate onto a baking sheet lined with parchment or wax paper. Place the pan in the fridge to cool for 30-45 minutes until firm. 
  2. Melt the white chocolate chips in the same way you did the semi-sweet chocolate chips. Add in the other 1/2 tsp peppermint extract and the crushed candy canes. Stir until well combined. Pour the white chocolate mixture on top of the semi-sweet chocolate layer and spread it out with the back of a spatula. Sprinkle the extra crushed candy canes on top, then put the bark back into the fridge to firm up for 30-45 minutes. Once it's firm, cut or break it into individual pieces and enjoy! Store in the fridge to keep it fresh and to prevent it from melting.
