Y'all, I have to be honest, I'm a little obsessed with this chicken salad.

Are you a chicken salad lover? I feel like it's one of those dishes that you either absolutely love or just can't stand. I'm definitely a fan of chicken salad in all its forms (buffalo chicken salad, anyone?) and this recipe is no exception. 

Easy Whole30 Five-Minute Classic Chicken Salad

First of all, it's super easy. I didn't name the recipe five-minute chicken salad for no reason. This chicken salad uses leftover roasted chicken breast to keep things simple. I love to roast bone-in split chicken breast for this recipe because they're so much more flavorful but, you could also use boneless skinless chicken breast. 

Next up is the most labor-intensive part of the process, chopping the fresh herbs.

Don't be alarmed though. When I say chop I mean roughly chop and when I say rough I mean ROUGH. I'm a home cook, not a professional chef, and my standards for chopping herbs are embarrassingly low. No need to go all Top Chef here, just come them up small enough so you're not eating huge herb leaves. No one wants huge herb leaves.

Your last and final step is to add your chicken, herbs, seasonings, lemon juice and mayo into a big bowl and stir. I told you this would be easy. Once everything is combined you can officially call yourself a Chicken Salad Master Chef and continuously impress yourself, and others, with your new found skills.

Bonus points if you add the chicken salad to a bowl of mixed greens, tomatoes, and cucumbers and add a drizzle of balsamic vinegar. You'll have won it all, my friend.

Whole30 Five-Minute Classic Chicken Salad

Ingredients: 

  • 2 cups chopped chicken breast

  • ½ cup Mayo

  • 1 tbsp chopped dill

  • 1 tbsp chopped parsley

  • Juice of one small lemon 

  • 1/2 tsp salt plus more to taste

  • Fresh cracked black pepper to taste

  • ½ tsp garlic powder

  • ¼ tsp dried oregano

Method

  1. Add all of the ingredients to a large bowl and mix until well combined. Add more salt, pepper, or lemon juice to taste. 
  2. Store in the fridge for up to 3 days.
