Y'all. Valentine's Day is my absolute favorite.

First of all my boyfriend and I started dating on Valentine's Day (almost 5 years ago!) so I'm naturally a huge sappy mess around the holiday. I just love that guy.

Secondly, it's a day all about celebrating love and we definitely could use more love in the world.

Lastly, it's an official excuse to eat more chocolate. As if you needed an excuse, right?

These Gluten Free Chocolate Chip Espresso Blondies are perfectly fudgy and chewy, and incredibly easy to make. There's something about coffee and chocolate that just goes together perfectly, so the recipe calls for espresso powder which gives them a rich delicious flavor that you'll love!

I used my favorite gluten free flour blend to keep these gluten-free, but you could also use regular all-purpose flour if you'd like. This recipe also calls for semi-sweet chocolate chips, but feel free to use milk chocolate if you prefer. Not a fan of coffee? You can leave out the espresso powder altogether and just make a more traditional chocolate chip blondie! 

P.S. I'm pretty sure adding a scoop of vanilla ice cream on top of a warm blondie will taste like heaven in your mouth...just sayin'

Ingredients: 

Method: 

  1. Preheat the oven to 350 degrees. 
  2. Use a hand or stand mixer to cream together the butter and sugar until smooth. Add the egg and the egg yolk and mix again until creamy and smooth. Stir in the molasses, vanilla, espresso powder, and salt. Then fold in the flour until everything is well combined. 
  3. Pour the batter into a greased 8x8 baking dish and bake at 350 degrees for 25-30 minutes until set and toothpick comes out clean. Let cool and then slice! Enjoy!
