Is it freezing where you are? I think most of the country is experiencing some serious winter weather right now and Rockville, MD is not exempt. It's positively freezing here. I knew that the DMV area would get pretty cold during the winter, but I'm not quite sure my North Carolina self was ready for this. I woke up to a blanket of pretty white snow this morning and I've been snuggled under my favorite blanket ever since. The only exception being for Mr. Riley the goldendoodle who occasionally has to go outside to handle his personal "business". Y'all. Those 5 minute trips outside are all the motivation I need to NOT go outdoors unless I absolutely have to.

I think the worst part of all this winter weather is the wind! Whew. Thankfully, Riley is almost 6 months and his business trips are a lot less frequent than they were 3 months ago. Thank the Lord God Almighty! The crazy part is that I almost waited to get a 6-week old puppy this January and that would have meant a lot more time spent outside in freezing cold nature. Thank God things didn't work out how I originally planned!

Ok, enough about the cold. Let's talk about something much more delightful - tacos! Specifically carnitas tacos that are made with the easiest crockpot pulled pork you'll ever make. Y'all know just how much I love my slow cooker and this recipe is just another example of how easy and helpful it can be. You just throw in all of your ingredients, let it cook all day, and when it's all said and done you've got easy prepped protein for the week. My kind of recipe!

I love using shredded pork on salads or adding my favorite barbecue sauce for a more traditional take. You can also get creative and think outside of the box to make a ragu or stew. My absolute favorite way to use shredded pork is by making carnitas tacos and of course I had to share my go-to recipe with you! So, on the next Taco Tuesday skip the chicken and ground beef and try out something new with this shredded pork!

Easy Crockpot Pulled Pork + Carnitas Tacos

Easy Crockpot Carnitas


  • 2.5 - 3 pounds pork shoulder 
  • 6 cloves garlic
  • 1/2 cup apple cider or 100% apple juice
  • 1 tbsp pink himalayan sea salt
  • 1 tsp red pepper flakes (optional)

Carnitas Spices

  • 1/2 tbsp of oil (coconut, avocado, olive)
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder 
  • 1/4 tsp dried oregano 
  • salt + pepper to taste 
  • fresh lime juice 


  1. Put all of the ingredients into a crockpot and cook on high for 6-8 hours until the pork is tender and shreds easily with two forks. You can turn this pork into carnitas for tacos by following the directions below. You can also use the shredded pork, just as it is, in salads or add your favorite barbecue sauce!
  2. To turn the shredded pork into carnitas, heat a skillet over medium high heat. When the pan is hot, add a 1/2 tbsp of oil and then a cup or more of the shredded pork. Add the spices and cook for a few minutes until the pork is slightly crispy. Remove the pan from the heat and finish off the pork with a squeeze of fresh lime juice. 
  3. Assemble the tacos with the carnitas and your favorite toppings! I love guacamole, purple cabbage, salsa, raw cheddar cheese, lettuce and tomatoes! Enjoy!
