I'm currently sitting at home on my parent's couch, sipping coffee, writing this post on VACATION. It felt SO. GOOD. not to have to wake up super early and go in to work. Anyone else feel the same way?

I'm feeling very grateful for the opportunity to be home with family and get a little rest. I hope you have the chance to enjoy being with family and friends and resting this holiday season!

Ok, so let's talk about this gluten free salted caramel apple crisp.

If you're still trying to decide what to make for your own Christmas dinner or need an easy dish to bring to a potluck, then add this to your list. This salted caramel apple crisp is absolutely delicious and such a crowd pleaser.

You can't really go wrong with a warm apple crisp and vanilla ice cream, but when you add the best salted dairy-free caramel sauce it takes it over the top. Bonus, there's extra salted caramel sauce for you to use on whatever you like!

Gluten Free Salted Caramel Apple Crisp

For the filling:

  • 6 medium granny smith apples, peeled, cored and sliced
  • 1 tbsp apple pie spice
  • 3 tbsp corn starch
  • 1 tbsp vanilla extract
  • 1/2 c brown sugar
  • squeeze of fresh lemon juice

For the crisp topping:

  • 1 1/2 c gluten free old-fashioned rolled oats
  • 1/4 c sliced almonds
  • 3/4 c brown sugar
  • 2 tsp apple pie spice
  • 1 tsp vanilla extract
  • 8 tbsp cold butter

For the dairy-free caramel sauce:

  • 1 cup full fat coconut milk
  • 1/2 cup brown sugar
  • 1/4 tsp pink himalayan sea salt (plus more to taste)

  1. Preheat your oven to 350 degrees.
  2. Use a large mixing bowl to make the filling. Toss the sliced apples with the apple pie spice, corn starch vanilla extract, brown sugar, and lemon juice until well combined. Pour the mixture into a large cast iron skillet or baking dish.
  3. Use the same mixing bowl you used to make the filling to make the crisp topping. Don't rinse the bowl before making the crisp. You want all of that good apple flavor! Combine all of the ingredients, except the butter and stir well. Use your hands to work the butter into the dry mixture until large moist clumps form. Sprinkle the topping mixture evenly over the apples. Bake at 350 degrees, uncovered, for 60-65 minutes until golden brown and bubbling.
  4. While the crisp is baking, make the caramel sauce. Place the full fat coconut milk and brown sugar in a sauce pot over medium heat. Let the caramel sauce simmer until it thickens coats the back of a spoon. Take the pot off the heat and add the salt. The sauce will thicken as it cools.
  5. Let the crisp cool outside of the oven for 10 minutes and then drizzle the warm caramel sauce all over the top. Serve with your favorite vanilla ice cream and extra caramel!
